A dessert wine from the Loire Valley, made from botrytized Chenin. Aged in 400 liter casks for 12 months.
Tasting Notes: "Plump, juicy and enticing, with a big core of quince, pear and fig fruit laced with notes of ginger and piecrust. The rich finish lets a maple note flash through." (Wine Spectator) Can be cellared for 10+ years. Pairing: Enjoy it with foie gras, fillets of duck, blue cheese, warm apple or pear pies, crèmes brûlées. Decant for one hour. Located on the right bank of the Layon region, at the heart of the Coteaux du Layon wine producing area. South to southwest exposure. Aged on its lees for 3-4 months, then kept in bottle for 6 months before being released for sale.
Tasting Notes: Nice deep red color. Harmonious aromas of ripe small red fruits. Nice expression of Cab Franc, round, supple, with a vegetal character, and long lasting. Pairing: This wine needs food! Enjoy it with cold cuts, red meat, small game, and soft cheese.
